New to using Reason - Need help please.

I just started using Reason for the first time. I'm trying to do some music with Complex-1 and these things are giving me a lot of trouble:

1) I can't figure out how to MIDI learn a parameter. Its so straight forward in other DAWs but I can't figure it out even after reading through the manual.

I want to use a knob on my keyboard and assign a CC# to the dial to automate Complex-1's parameters.
How can I do this in Reason?

2) Also, when I turn a dial in Complex-1, the resulting sound is "steppy". I'm following a tutorial and its very smooth in the video, but not here. I tried adjusting sample rate but that didn't help. I'm on a Mac i7 w 24 gigs RAM and haven't had any trouble with latency in other DAWs (my main DAW is Bitwig).

Any help greatly appreciated!

I'm not at my music computer now, but my first question is "Have you set up your keyboard as a Control Surface in Reason's Preferences?" Once that's done it's simple to assign CCs to knobs.
