It really depends on what I'm into at the time, but I tend to reach for Serum first. I know it pretty well at this point so I can work with it quickly, and assuming the sound I want is in its range I can generally get there faster than in any other synth. I have reservations about the quality of the oscillators, but the flipside there is that I've used the thing enough to find them. There are plenty of alternatives if I know the sound I want is going to challenge those limitations.
I'm doing a lot of stuff blending sampling and synthesis at the moment, so Europa, Harmor, and FactorSynth are getting a ton of use. In general terms though, Serum tends to be my first go-to.

Of my very limited free collection I use U-he Tyrell N6 the most. Just got Komplete 12 though so that will change with all the new possibilities!

In my recordings, I mostly use hardware synths: Eurorack, Lyra-8 and Reface CS.
I use software instruments only about 10% of the time. Aalto, Bitwig FM-4, Bitwig Grid and LuSH-101.
I used Arturia Buchla Easel V to make some notification sounds for my phone, but haven't used it on any of the 4 albums in the last 6 months.
I do use VST effects a lot though.

A friend of mine uses FL Sytrus only, and his music sounds rather cold to me, which I think is mostly because of that synth.

I probably use Monark the most of any one synth, because it excels (for me) at bass. For a lot of my work I don't want a velocity sensitive bass to keep my low end consistent, but legato mode and legator glide offer a lot of possibilities for emulating accent and hammer techniques, and I'm always discovering something new. Just yesterday I realized that there are some sweet spots between the load and feedback settings that I hadn't noticed, allowing me to produce a pretty awesome acoustic upright bass sound. The Moog-emulated envelopes are also somewhat unique I guess, and inverting the filter envelope also produces some unusual articulations. It's interesting how much you can discover in a relatively simple mono-synth.
Operator (Ableton) is maybe tied, especially for the adjustable phase oscillators - great for percussion, dings, etc., and when I do want a velocity sensitive bass. Also, the Cytomic filters and built-in distortions makes it a pseudo-analog emulation, and it's seriously probably underused by people with Ableton. You can also create an entire drum rack of Operator sounds, retain velocity, etc. for each hit, and use very little CPU. I'm also looking forward to creating a bunch of sampled kits out of it, toss them into my Digitakt, and take few days off work
Otherwise I just seem to go through periods where I'm using Diva, then PolyKB, then Thorn, etc... And always a bunch of other Reaktor stuff (though I don't consider that "a' synth of course).
(also - imma just say if there's a pool on a certain someone being back before then end of the month, imma bettin'
