I would trust people with scientific literacy first, those who can understand psycho acoustics, the implications of the sampling theorem, the physics of sound and the limits of the human hearing.

Many musicians romanticize stuff, get emotional about gear, I mean it is a craft and passion goes in to it but they really don't have a clue about physics and will buy an expensive cable because magic gnomes make it sound better.

Depends on how you do the A/B test and what is for, is the hypothesis about human perception of analog vs digital? then if it is well done it can establish relationships and maybe causality. But yeah it is not going to tell us much about the actual differences about analog vs digital.
