Same on my side.
The only most-unique, irreplaceable und way-ahead-of-it's-time plugin is Ohmicide OG and this still runs like a charm.

Guess I'm cheating because I can't pick just one but I'd like to bring back (and de-SynthEdit) the de la Mancha line of plugins.
Sure he had some dud releases but he also made a handful of really awesome, irreplaceable stuff that I'd love to use in my tracks today.

Z3ta+ is my choice. I actually still have it, but I mean it would be great if it could be open source and the Surge team could take over.

There was a virus-style gui for Z3ta+ along with (iirc) some wave tables, but it apparently sounded nothing like a virus. But I do think there is room for multiple synths like that

I don't know if it's been mentioned already but my vote would go to Linplug's CrX4. I still regularly use it though it's 13 years old now.
