As far as I know there are already a few sequencer type apps (ielectribe for example) that could do just what you're looking for hjortan.
About the mouse, you should be able to use a Bluetooth or WiFi mouse but I'm not too sure... wouldn't that kind of defeat the point though?

Bit the bullet and got myself an iPad...
Couldn't resist the £329 price tag on the Apple website, and I know once their stock runs dry, the iPad 2 (at around £450+) is gonna be the only option... combine that with second hand prices going even higher than direct from Apple, and it was an easy decision.
Anyway, I'll give the whole screen sharing malarky a go when I get a chance and report back here with findings incase it may prove useful to someone or help someone decide whether or not to take the plunge.
