One more possibly useful thing... Audiomulch will allow you to change whole 'scenes' with a MIDI controller using its Document Switcher functionality. A whole different modular rack of effects and instruments at the flick of a button. Might be something worth investigating. There may be other DAWs that can do this of course...
edit: I've just thought you can probably do this on any DAW by just having your various set-ups on different tracks and muting/unmuting them as required. Ah well...
