I could be wrong but removing the vst3 plugins does break all Steinberg plugins on my system (Mac, Ableton).
I remember reading somewhere deep within a Steinberg support document that this is because all plugin versions of Steinberg plugins need to access the vst3.

You're right. I just opened up the Halion Sonic AU and it contains a link to the VST, not the VST. It turns out after closer inspection, Arturia now wraps the VST3 into an AU, though they seem to pop the actual file into the package rather than a symbolic link or alias so it seems to survive the version in the VST3 folder itself being killed or moved elsewhere.

No. For instance VSL has now made VST available to plug into VE Pro. They're simply two different plugins. Logic is loading AU Native Instrument items. They're in different folders as you've probably now seen. One is not a reference to the other either way. Also, NI's are not VST3.

Yeah, I don't think Steinberg makes real AU plugins.
