I had the same problem and ended up buying them all. I mean : all...
Well, not the Eric Whitacre one, the price is really too high. And not the shi|ty ones, such as Ariasounds.
In the end, I really love using the 8Dio ones (Insolidus and Lacrimosa are soooo good), I think Soundiron Olympus does not work well in the mix, and Storm Choirs are among my favourites. Fluffy Audio is my biggest deception so far, I never managed to use it anywhere. I also use Oceania by Performance Samples all the time, but it's a very specific library (think of the time you're about to learn a new word in Skyrim). Genesis Children Choir is great but won't give that epic sound, I use it to give a dreamy Danny Elfman sound. EastWest HC is a good compromise indeed, the sound is quite enjoyable (and you can make the choir sing exactly what you want), but the engine always cries for more RAM.
If I had to do it all from scratch, I think I'd buy 8dio Requiem, Storm Choirs and EastWest HC first. You can cover everything with those three. If I had to choose only one, it would be between Requiem and Hollywood Choirs. Not that these are the very best, but you can do everything with them and they are really lovable. Just my opinion.

In the end, I did not buy Eric Whitcare, which nevertheless appealed to me a lot;
But it is true that it seems too expensive...
I will listen to the demos and tutorials from the banks that you elected.
