Actually, Kontakt does do Wavetable synthesis now. It's not very robust, but it is there.
Along with the granular synthesis capabiltiies, I would say Kontakt could fit the bill.

Unify would be the universal solution. For those who don’t have Bitwig as host…
And nobody mentioned Halion yet…
Personally I don’t get why this kind of workflow is still in use. It would only make sense for playing back old fashioned Midi files.
Having separate tracks seems way more convenient for me… I could still put them in a folder track and keep all flexibility…
I use multiple Midi channels to drive MPE synths and nothing else…

I know this is a very old thread but is the new Ableton Meld, which is bi-timbral, capable of responding to midi from two different channels simultaneously? If yes, how does one do that? I don't see anything like that on the Meld tutorials on Youtube.

Blue Cat's Patchwork lets you make super plugins using layers of plugins and FX chains. Each layer can have its own channel!

I'd recommend Plugin Guru's Unify this way you can use whatever synth you want to load inside UNIFY

Halion is probably the most close to a workstation with few different synth such analog, FMLab, wavetable, granular, spectral, a real sampler. Each module is a synth.
Falcon, Omnisphere, Kontakt can also do multi timbral
Falcon is more like a modular with a lot of synthesis (analog, FM, wavetable, sample, granular, additive, organ, a lot of effect, unlimited number of osc, layers, filter). The limit is the cpu and the ram.
Omnisphere an amazing synth. Kontakt is close to a Halion.
Unify is a different thing. It work like a host. You can add your on third party synth and effect.
