Wonder if Stepic is multi-touch capable.

No idea about multitouch, but you can run as many Stepic instances as you want - with 1.5 you can even run them into each other and trigger sequences with sequences with arpeggios etc.
(Using Bitwig here, where these things are very easy).
I find that the step divisions and holds are especially effective with the new Arp...
Edit: I just asked: It seems there is a user who uses Stepic with multitouch on Windows successfully so it should work. I can also recommend the Discord for more in-depth questions.

No, the Grid can't, but you can have as many Midi plugins in a track as you want at any position and in any order - that is what I was referring to since you asked about multiple instances.
Other hosts make that much more complicated needing separate tracks for each such plugin.

Not sure what you are trying to achieve, but with Bitwigs semi-modular structure and flexible routing, I don't really miss the option to use VSTs in the Grid.
