Professionals mostly use Macs? Should I go Windows or Mac?

Go for whatever makes you comfortable using! It is that simple.

Personally I think Macs are extremely overpriced for what you get, but if you prefer to use MacOS then go for it.
A lot of producers use Windows PC's for heavy duty productions (ie not laptops!). But then use laptop Macs for live situations where you don't need as much memory and CPU.

Running Windows on ARM is not recommended, since most software is developed for x86. I don't know if there's even any DAWs for Windows that are compiled for Windows ARM. Probably not many plugins.

Now in 2023 professionals could go Mac AND Windows with M1/2 processors so CASE CLOSED
