They can port the algorithms directly without emulating the DSP chips. MOSS synthesis (Prophecy/Z1) was developed on the Korg Oasis development environment, which was later released to the public as the Korg Oasis PCI card. Yes, they had to port the old OASYS PCI code to 32-bit code and do it very carefully, because the OASYS PCI card used Motorola DSP56301 which are 24-bit processors (with certain parts 56-bit). You can port algorithms but numerical stability of them can change when word length is different.
Moreso, Z1/Prophecy actually didn't use those Motorola chips, but instead used Texas Instruments TMS57070FPJ DSPs, which were also 24-bit most likely (which probably made the transition to Motorola way easier).

I have been seriously auditioning Prophecy for a week now and comparing to other VA synths.
I believe that this is one very interesting and capable polyphonic VA synthesizer that can certainly sound very analog but also does a lot of very good digital stuff. It does come out on top for me right now.
Honestly, which other synth provides all these osc modes, filter modes, feedback and modulation options in such a simple package? There might be a few others but for some reason I prefer Prophecy due to simplicity and effectiveness.
Of course, I already have a proper minimoog emulation but the Prophecy doesn't aim for that imo.
It could give many other analogs a run for their money I am sure in capable hands.
There is the physical modeling section which I haven't fully explored yet and it would most likely be unique and interesting although technology has probably improved here.
I still did not pull the trigger yet but wanted to share this.
