the character of 'blues' has a LOT to do with the tension of major and minor thirds, on those basic chords I IV V.

actually there are some poignant things you can get with a major approach on IV and V, and even on I, but it takes more experience to do it than it does to simply whip out a minor penatonic say from F on, those chords in F.

another thing is, to get that major/minor blur on a piano is an illusion you achieve through manipulating discrete tones in a line; on a guitar you can actually blur those. So, a piano is automatically more of a cornball instrument for blues and takes a lot of technique to get away with much.
