How do sound designers create that squashed transient on kickdrums ?

Not only for the release tail but for the transient sound also. And make a simple 4/4 loop only using your kick or a whole beat on different bpm and use the gate then. It could bring other results than using it only on a onehit because it maybe won't reset fully to zero sometimes. Sample/Render/Freeze that and cut it up into a one hit again for that.
Try for example PreFix from Bootsie. I love this one. It offers different attack times ranging from peak to rms iirc. You have a hold option, a pretty flexible release tail and a very unique pre-opening function. In connection with the filters before that and the inbuilt S/C path to trigger the gate/expander it's pretty versatile.
Think about it more like a contour shaper. Fully closed = no sound. Fully open = full sound. Now think a second about a fully closed gate that gets triggered by your signal at a certain treshold with a specific knee in a specific range and that will be "shaped" by your a,h,r & p settings. How cool is that?

Actually, I always wondered why so much hassle with creating a kick drum when you can always sample the one you like. Even though I created my own kick drums from scratch with Ableton's Operator, I found it to be too much time consuming compared to sampling.
Although, on the other hand, if no-one designed kick drums I would have nothing to sample
