You need a MIDI interface.
just like you would on a PC.
However,
Wireless MIDI is a decent option, depending on your intended usage.
I find the latency pretty usable for programming/composition needs, but it's not suitable for complex solo performance imo.
It's also horrible for anything synchronisation related.

FWIW - it is possible to send Midi to a Mac using the iPad Air's stock Lightening <> USB cable. I'm using iOS 8 and 10.9 on the Mac - I've no idea about other configurations. No DIN cables needed and it seems very responsive. No idea if it is possible to create this functionality on a PC.
