Let's start with Magma, who played such weird stuff, they actually invented the genre (or style?) of zeul. Yes, now we have a name, but nevertheless.

The Mars Volta and The Dear Hunter.
Gentle Giant.
Al Di Meola circa late 80s, such as 'Orange and Blue' and 'Infinite Desire'.
Andreas Vollenweider and his 'Book of Roses' and 'Kryptos'.
Adrian Belew, most of his solo works.
Cynic.
Devil Doll (Slovenian one by Mr. Doctor, not the US rockabilly band).

In most cases, you can of course find some label, yet you will not succeed in telling anyone how this sounds.

On the other hand, there is a special word 'eclecticism' which will do good in many cases.

For example, mentioned already Yello (and I second this nomination) would probably be eclectic electronic pop?

But then again, using word 'eclectic' is basically saying you can't say anything.

but krautrock in and of itself is hard to define, kraftwerk and cluster for example have little beyond geography in common.

Let me introduce the next one: post-folk. It's basically anything popular since the blues. It can't fail.

Yeah, funny thing is, KC is a style in itself. There's even a few bands mimicking their signature sound and approach to music, such as Anekdoten (who themselves said they follow KC of Red era) and David Cross, who actually played in KC of 70s, yet his solo efforts (such as Testing to Destruction) sound remarkably close to 80s Belew era KC, with absolutely crazy violin work successfully filling for eccentric Belew's guitar.

I would really like to hear some band who successfully explore and develope in Gentle Giant's way, but apparently there are none such.

I feel that most music that comes to mind can be easily categorised in one way or another. There's no shortage of genres, sub-genres and musical niches, but yes some artists intentionally cover a lot of ground making them hard to pin down stylistically, yet still I think they can be at some level.
Some genres and styles have become so diverse, hence vague and meaningless that it seems only natural that certain sounds and aesthetics within these genres acquire their own tag.
So while it's mostly pointless to try and put these diverse artists/musicians into one of these vague musical categories, it helps if you can identify them somehow, even if only vaguely.
