I grabbed a couple of adpaks from a user here for $20 each last year. I'm interested in getting a couple more, but that user has vanished and other than the Studio Pop one that everyone offers, I haven't seen any for a long while and now I'm not interested in paying more than that, LOL! If you do fancy getting others at a later date they can usually be had at a huge discount in the 'Buy & Sell' forum here too. Got most of mine that way, and the XLN transfer process is really simple.

Yep, the Soul/R&B kit is pretty versatile and I love that tight focused sound. If you've settled on Fairfax 2 and Soul/R&B, maybe aim for the third choice to be the farthest away from those two. That way you have a wider palette . The thing is, I really enjoy working with AD2. IMO, It's a straight forward drums/percussion module that can do a lot of rhythm work heavy lifting when working on a track. You can use it for its patterns when sketching out ideas or live record some expressive drumming when the mood is right. Some kit pieces sound better than others so I tend to mix and match kit pieces into different kits.
Personally I think the R&B kit, the Fairfax 2 and Black Velvet are the most versatile all rounders, but to will really depend on the kind of music you produce.
Don't disregard the individual kit pieces choices though. Even after you settle on your choice of kits, you can go back and choose individual kit pieces to supplement your sonic options. A piccolo snare, or a specific base drum etc.

AD2 and adpaks were my go tos until I got sucked in by Superior Drummer. My favs are:

I can't help with any heavy suggestins, but all of those are good contrast to what you have.
I need to get back to AD2. Great sound, and I miss the simplicity. If AD3 ever comes, I hope they add a sequencer / song track. It's the main thing that keeps me in Superior Drummer.

Actually, this thread prompted me to look up who it was. It was glitch-o and he had some bundles available still. I grabbed a couple more kits and I think I have all my bases more than covered now!
