My all-time favourites are mostly contemporary - Penderecki's works from 1958 to the late 60's would probably top the list (especially 'Threnody to the Victims of Hiroshima', the St. Luke Passion, and the 'De Natura Sonoris' pieces. Also have a soft spot for his 'Polish Requiem' of the 1980's.
Other than that, Bartok, Ligeti, Lutoslawski, Gorecki, Part (esp. 'Te Deum', which is just about as close to perfect as choral composition gets), plus lots of early church music, roughly from the 12th to 16th centuries.
Some bits of Schoenberg, Shostakovich, Mahler, Debussy, Hindemith.
Can't stand Philip Glass. That's where I draw the line.
Tangentially related: Xenakis and Dockstader - although technically outsiders (though Xenakis ended up eventually being accepted into the mainstream of 'serious' music (ridiculous term) - for pushing the boundaries a few light years further out.

Stravinsky: Firebird; simply bottomless depths in there.
Debussy: Prelude to a faun's afternoon and lots of other works.
Dukas' Sorcerer's Apprentice has already been mentioned.
