Just as a practical example, there's a very simple theremin patch among the stock presets in TheLegend (called Old Theremin KS, but being so simple it can be replicated on many other synths including Arturia's), which sound-wise could fool basically anyone into thinking it was an actual theremin playing, as long as the performance is believable.
Hardware theremin models (meaning their oscillators, LPF, op-amp) sound different from each other anyway.

The missing elements to a 100% believable performance mainly consist in variable vibrato rate and (even harder and more important) variable pitch-glide values, which are effortless on the physical theremin through hand gestures, but much easier said than done through standard controllers, and quite honestly still impractical on newer controllers like the Seaboard or SenselMorph.

I respect your view and of course I agree on the fact that no theremin has been specifically modeled at circuit component level yet, but I still believe the iconic themermin sound is an extremely basic and primitive synthesized sound which many synths can pull off very convincingly, especially dirty/drifty analog emulations.

Anyway, a dedicated theremin emulation made after a specific vintage model could be cool, I guess. Never say never.

Truly authentic theremin sounds are not readily available. This includes not only the unique interaction, but also the tolerances and idiosyncrasies of the vintage components. Instruments are defined by their limitations as much as their abilities.

The way you interact with the theremin is of course the most defining aspect of the instrument and it’s unique sound. A virtual theremin needs to simulate this interaction. This would of course be achieved primarily through a 3D skeuomorphic interface and your mouse, but the pitch and x-y-z planes could easily be linked to controllers, such as the pitch/mod wheel and a keyboard.

Obviously you never tried to play a Theremin yourself. The idea to control this with a keyboard is just beyond me.
To control just pitch and volume on a keyboard with wheels and aftertouch of course is possible, though you certainly would rather do that with a MPE controller, but the characteristic of a Theremin is almost totally defined by the way its controlled. A 3D skeuomorphic interface and a mouse is a ridiculous idea... A real Thermin with a pitch to Midi (2.0) interface would get you closer. And as a Theremin is sound wise the most simple instrument made ever, any synth would enhance the experience... Of course you can add all sorts of tube amp emulation to it as well... But why should you if you need a Theremin to play a Theremin emulation...???
The Ondes Martenot has a similar sound creation but as its played differently the musical outcome is different as well...
Arturia is a french company, they would more likely model an Ondes Martenot. Would be more rewarding, as the speakers are always part of it and are needed to be modeled as well, and that isn‘t too hard nowadays... They could also sell the cabinet responses separately...

You would want to have pitch guided by midi notes so it would be usable. The idea is to have a theremin that sounds like it's being played by someone who can actually play one.

For me:
- Yamaha SY-99 (I know it would be not so simple arranging an agreement for AWM2 original roms), sysex compatible with hardware, maybe with expanded rom set and user-loadable samples: it will be a true AFM/RCM beast!
- ARP 2500 ('nuff said!)

I've managed to get V8 installed - I find I cannot get Vocoder to launch in stand-alone mode. I have not tried as a plugin.

Does anybody know if Arturia is going to have the new versions of Jup-8 and Stage-73 available for v7 owners (just as they used to do) or are the new versions v8 only?

The new versions are only in V8 but you should be able upgrade them for 29€/$ if you go in the dedicated product page.
