The GUI update did not change anything behind the scenes I believe. Anyway, for me I love all of them to be honest, but they are very different. MS-20 and ARP Odyssey are more analogue than the others, while Mono/Poly and Polysix are like sweet VA (I love them!). M1 for me is a rompler mostly with synth functions but Wavestation is sample-arranger based synth, but not like DX7 or Serum or other "pure" synths. Still an excellent sound source with sweet digital sound 
This bigger GUI is definitely a great help to re-explore those timeless synths Well, I never bothered to use the older versions with their tiny GUI's , they were just picking up static on my drive. Thank you for your help. I am yet to comprehend your excellent post earlier about getting started, as I am a noob when it comes to hardware synths. Never owned any. BUT with the old legacy you could just open
WS from default and just save the entire thing as a bank (.FXB) in your DAW and it will work.
