Fabfilter plugs - Fabfilter has a great style IMHO.
Ozone 3/4 - Izotope has the science fiction thing going on here, although some of their other plugs aren't nearly as visually appealing.
FLS- I'm probably going to get a LOT of flak for this, but there's just something about the FLS interface that makes me want to use it. The irony is, I don't use it. At all. As I've never taken the time to learn it properly, I just find it confusing. But the GUI and the GUI of IL's plugs - which I DO use- are very appealing. Standouts to me are Autogun, EQ2, Biohazard, Morphine, and Vocodex.

I'll believe it when I see it. A new version/update has been promised in the forums for years. +1 for Fabfilter's Pro-Q. I would love to see a synthesizer plugin with that similar color scheme.
Softube also has some really good looking GUI's. FET Compressor is one of my favorite looking.
