I've looked everywhere, the manual, my midi keyboard manual... everywhere. Is it even possible to assign the Record button in FL to a button on my midi keyboard?

Apart from some special controllers with transport controls, I think this is not supported. However, in the Recording Panel you can select the Wait option (Ctrl-I). Then record/playback only starts after a note is received.
