Sonigen Modular.
It's at beta stage but very usable. It will cost some money when it reaches ver. 1.0 though.

Well, I'm looking for something that's very modular, but not as modular as the Moog, or the ARP 2600, but just enough so I can see how many sounds I can make with what I can get. The modular synths have to be complicated enough so I can learn how they work the way they work, and learn why they work the way they work.

+1 - you can pretty much stop looking, IMO this is the best free modular you will find, it may well become the best modular you will find!
