Try out Groove 3 if you've already decided on the synth you want to use. Otherwise, give Syntorial a go.

Great sounddesign tutorials above, espceially the series on SoundOnSound! Also check out Seamless.
As for the audio engineering-thing, check out recordingrevolution (includes both free videos and courses you'll need to pay for), pensadosplace, and jonathanwyner on Youtube.
dubspot and artfx studios have very good mixed tutorials as well.
