Is there any way to assign a keyboard shortcut for "export/create an audio file..."?
I use this command frequently and for this the button->menu is annoyingly slow and cumbersome.

Only if it's available on the settings page as a key mappings option which I don't believe it is. Perhaps there is some kind of macro program that you could use although that's probably unlikely as well.
