I have attempted to mix down a final version of my song but can hear one of the notes doesn't sound right compared to a demo I did not long ago. I'm pretty sure what's happened, is that a different sample of the note is being playing (round robin, random and all that) and I'm wondering if there's a keyswitch or setting that will allow me to pick the exact sample for that note out.

Not sure if this helps but you can manually reset the round-robin cycle in Settings -> Sample. Unfortunately, I don't see a way to automate that. You might be able to test for which sample is bad and just replace that sample with a good one. I'm in the middle of trying this with AGT and AGL (they both have an open D sample that sounds out of character with the other samples - so bad that I can't use them) but it is not yet obvious to me how to isolate the individual samples.
