I like to work with audio stems so if I'm wrong with the time I'll either start again or move it from SX2 to Ableton 3. Even if I've worked a song acoustically I find I want a different tempo when I start recording.

I know it sounds a little crazy as the tempo should fit the style and feel of a song but where do people start? If the sequncer opens up at 120bpm, do you leave it there and change later or are you sure what you want from the word go?

depends on what genre u want to make
dnb - 170
hiphop/triphop - 80-120
trance ~140
dance/etc -120 and up
but these are just rough inaccurate guidelines, experiment thats the best way to figure anything out

Seriously, I like about 98 bpm. I'm the high-strung type, so I like a relaxing tempo. Or maybe it's just that 98 bpm is Finale's default tempo... Anyway, I tend to keep the same tempo when I use a sequencer, just because it's easier that way -- but I vary quite a bit when recording live, perhaps in a lame attempt to counter-balance the metronome.
120 is supposed to be optimal for dance, given human physiology. Take that with a mountain of salt!

What is my favorite tempo? It used to be 126 because you could walk to it and it was twice my pulse. Now my life is more hectic and when I get time, I write at 140.

...unless I'm picking something for pseudo-numerological reasons, and then it's whatever number I can justify.
For example, 120 is nice because it fits into the whole 12/60/360 thing we are used to with time anyhow. 125 is nice because of the Law of Fives fnord. 128 or 64 or even 96 are nice for their geeky associations. And then there's 69.
