Do I just bring up 2 tracks in CoolEdit multitracker window and bounce to stereo?

Just verifying... you have two seperate files; one is the left and the other is the right channel. And it has to be merged to one stereo wav file?
CoolEdit can do, just like you've described. But WaveLab & Logic should be able to do this also I think. Can't think of a reason why not...
There is no "best" since the result is simular. Maybe if you go counting mouse-clicks plus time it takes, you will discover which host does this better for you.
