Does Manystation have an ignore release function?
When I play the drum kits I have to hold down the keys for the samples to play out. This makes it hard to play the cymbals in real time.

As ManyStation is not a drum sampler, it makes it a bit tougher to play drums live .... But in your piano roll you can just extend or end the note where you want. It works great for programming a track but as you mention ... It is not so great for Jamming Live so to speak.
I will ask William the programmer about this though
Maybe it can be done somehow or at least added to the feature request list.
In the mean time, try layering the drums with Zones and putting the cymbals on a zone with a Long release on the ADSR. This layering on kits can also create some interesting new sounds and should accomplish what you want i think.
