I've read the ST2 manual but I don't see this addressed. Whenever I select a combi, I can't seem to get back to a single instrument sound. Can someone tell me how to do this?

What I do is clear out what I don't want by clicking the little button under the "empty" column, until what I don't want is gone.

Combos and Instruments aren't two modes. It's much simpler than that - they're just two different ways of loading sounds into ST2.
ST2 has 16 parts, and you can use the right-hand pane to load instruments one-by-one into the parts on the left-hand pane.
Combos are like a shortcut or "batch" loading. Combis load a "snapshot" of an entire ST2 setup. Typically this loads several instruments and sets them all to MIDI channel one (so they are all triggered by the same notes).
If you want to "unload" a combi, simply unload the individual instruments by clicking the triangle button next to each instrument, under the "empty" column like harmony gardens wrote.
If you want a really fast way to do it, load up a fresh instance of ST2, and SAVE a combi (when there's nothing loaded). Call it "init" or "empty" or something like that. Whenever you want to "unload" a combi, or just start from scratch again, just load your "init" or "empty" combi!
