i imagine the main usefulness of this would be for other people in the studio to see what he's doing while he's working, so they don't all have to crowd around the little monitors. i think that would be kinda funky really.

Yes, that's one big advantage.
Another one is you can hang over any equipment without 'moving away' from the monitor. Visual feedback independent of where you are ...

I'd guess that it's a projection screen for any source, such that he can do film scores while watching the footage (as could any other players in the room!).
