I'm looking for an application that will let me create instruments using samples and save them in different formats e.g. Akai, Kurzweil, WusikSND, etc.

So far I've only come across AWAVE that is able of doing this but it's expensive. Is there an cheaper alternative to AWAVE out there?

There are more expensive options. But I find Awave works well. It supports so many formats. It's not perfect but it has the most allround package I've seen. Chicken systems Translator, CDExtract are others you could check out.

A cheaper alternative might be building instruments as soundfonts (with Viena) or in sfz format (sfzed editor or just with a notepad) and then converting them with Extreme Sample Converter.

Can they create from scratch is what I mean

if its just converters then there are cheaper alternatives - if it is to create instruments from waves like Awave can then this would be good to know

The 'different formats' is tricky. An alternative could be to use sfz format or VSampler to create the instrument and ESC to convert it. And of course for Wusiksnd William has his own program (I don't have the URL, but it's downloadable) to create a wusiksnd file from a set of specifically named mono WAV files.

I guess I should have been smart and look at the features instead of only the price. I bought ESC because of that (and it's a great program), but could use Awave now as well... Not because I cannot do it now, but ease-of-use is worth something too...

I don't think so But I'm not sure. Chicken Systems Translator is used primarily for conversion from one format to another. CDxtract is sold by the same folks.
Awave on the other hand is not really a converter. It could be used in that way but it does have the tools to take the raw waves and trim/crop/pitch/ and well manipulate to a finished sample set. It has so many functions I've not used them all. But the program is set up like you know what your doing. The help Doc can take up to where your pretty close but trial and error get you the rest of the way. I recommend this if you manage your sample library. Edit or combine sounds and in general like to make your own sample sets.

Extreme Sample Converter is the best alternative imho, but I still prefer Awave since it lets you create stuff from scratch. ESC has some basic editing functions but you can't import a bunch of wav files and make your own sf2 for example. ESC is strictly for going from one format to another.

Also, if Kurzweil format support is important to you, Awave has the best conversion to and from.
