i personally don't know the cubase methods, but if it turns out to be limited in that area, you can always get energyXT which has a super-easy way of mapping CCs
Kick, punch, it's all in the mind.

Preferences\Midi\ Midi automation input to automation tracks.
The learn function i believe it´s dependable on plugin functionality.

There are a couple of ways of doing it.

If you want to control a VSTi, it depends on the actual instrument you want to control. Some VSTi's offer a midi learn facility where you can set any knob to control any parameter. If you can't learn CC values in the instrument you want to control, there's probably a fixed list of controller numbers in the instrument's manual.. In both cases the instrument should react to the CC messages as long as you have a midi track routed to the instrument input.

The second option is to set up a generic remote device. This is covered on page 346 of the SX operation manual.. This works for both instruments and effects and the internal Cubase mixer aso..

For instruments, the easiest solution is probably to have a look in the instrument's manual and not using the generic remote.

Oh. Some effects may also be able to take a midi input as well. After inserting the effect you want to control on an audio track, have a look in the output list of a midi track and check if the effect shows up there. If it does you should be able to control the effect without using the generic remote... Again, you need to check out which CC messages the plug-in responds to in the plug-in manual, though.

Using eXT is a good tip if you want to easily map cc values to effect parameters, as haydxn mentions. It could have been implemented a lot more elegantly in SX, i think..

Hope that helps at all and don't just confuse you further.. It's probably not the best of explanations, so hopefully someone will jump in and provide a better one.. :P
