1. If you want to convert a real space into an IR, you will have to have an impulse generator (some people use starter's pistols, but a sine sweep is best), at least two high quality microphones and a high quality recording device, to record the 'response' of the space to the impulse.
You then need to 'deconvolve' the recording to remove the impulse recording from it. What's left is an IR.
2. Check out Voxengo's Impulse Modeler - it's a neat way to make your own synthetic IRs that approximate a real space.
3. If you don't care about real spaces at all, just make your own WAV files out of anything. Experiment with WAV files and see what different types of sounds do to signals when convolved with them. It's really a trial-and-error thing. This was the basis for the IR collections I sell at www.spiritcanyonaudio.com - I've been using weirdass WAV files as IRs for a long time, and learned a few tricks, but there's nothing to keep people from making their own IRs as well.

Oh, basicaly there are two streams for impulse creation - natural and artificial. You create them via starting pistol, firecracker?, baloon, dirac, sweepwave. There are programs for artificial impulse creation, such as whith voxengo's. It depends on what your trying to do and what works for you. There are plenty of free impulses to download at Noisevault, and Iv contributed some there. The simple ways, I think are the best, because its easy to share, and hopefuly at the end of the day youve got a fair pallete to play whith.
