Yep, it would be a great choice. He probably doesn't need 20-40gb of storage space, so why not save a few $ and get a mini.
He,s a Civil and structural engineer yet not very computer literate(a bit like me really) so something like the ipod with its included software would simplify the process for him.

An iPod + iTunes is very easy. I have two friends + my gf use that setup and have no problems. They are all far from computer experts.

Also with this setup you can use iTunes to encode to mp4, which is in general quite a bit better than mp3 at the same bitrate (yes, exceptions do exist though..)

if you've installed other audio software it may include the professional mp3 codec, allowing for high encoding rates

Windows Media Player 10 *does* encode to MP3, on it's own, without the need of a plugin, and it's capable of encoding up to 320 kbps.

IMO, dbpoweramp is still unbeatable for all those conversions.
But, you need to find something prior to version 11, which isn't free anymore. Maybe one of the various download sites is still offering it.

CDex isn't bad either, but I'd have a look at Exact Audio Copy as well.

Still, if you can, get yourself a <V11 copy of dbpoweramp. It's just the most convenient application of all times (perfect right click integration, supports a number of codecs and all sorts of bitrates).

I def agree with Sascha here. Nothing better than EAC out there. Plus it's the only one that helped me out with a problem i had recently. (Here)

And for quick conversion...have a look at Rarewares site for mp3/ogg/aac enc/dec.
Lamedrop & Oggdrop are very cool ones imho.

Interesting. I hadn't realised that. Still, it's not killer expensive...

I'd also suggest iTunes because it's easy to use, it has a good workflow and a nice interface + the AAC lossless codec and it contains no spywares (yet). It's really easy to manage a library with this thing. Sure, the ripping quality is inferior than EAC but it's an all in one solution and the quality is good enough for most people, esp. when listening with a portable player.
