Ok.

Currently I've got my tracks laid out in different cells on the grid (one entire cell = one entire track), one after the other, horizontally. To start with I'm using it as a very basic layout to mix together a live set rather than to 'produce' with it yet.

As it gets to the end of one track, I click 'play' on my next track and slowly adjust the volumes until the second track is entirely mixed in (all tempo setting etc has been locked in beforehand).

My question is. Is there a way to actually automate or 'trigger' the second track to start as the first track gets to a specific point?

You need to read the manual and look at "Trigger actions" (or is that "Follow Actions", I forget out of the top of my head). There are various options. There is also a global setting for this in the preferences.

Definitely look at how to use Follow actions. There are tutorials on the Ableton website and forums. To use them you will need to have your clips in different scenes rather than tracks like you have it set up now.
