I can imagine it would be a problem to automate the changing delay time to make this happen smoothly. It may also be that no matter how smoothly this is done you may perceive it as flipping back and forth from left to right without there ever being an "in between" pan.

When delays for both left and right are the same it will sound like it's in the middle - I think the bigger problem is that modification of delay line lengths is actually a lot like moving the object from side to side - and at higher speed, that will introduce doppler effects, giving a chorus-like sound as pitch goes up and down. Probably best to combine ampitude panning and a varying phase shifter (first order allpass ought to do, I would think). Dunno if such a plugin is out there, though.
