can someone please help me understand how to properly use the LFO button in the OSC sections?

is it strictly intended for using the OSC as an FM modulation source, or are there other useful reasons to employ it, like modulating a filter or something?

i'm probably revealing my ignorance here but somehow the manual left me going: hmmm...OK, but why?

Actually... you hardly need it, because envelopes are both easier to use and more flexible than LFO modes.
The LFO button slows down the osc, and yes, its main use is as a FM modulation source.

after enabling the LFO feature on an OSC, use it to modulate another OSC by setting an appropriate value in the Mod Matrix.
