I hate noise bursts. Why do developers insist on putting a noise in a demo that's twice as loud as the instrument you're trying to play? It's startling sometimes! Does it really need to be so god damned loud?
ahem.
The best demo restriction is being unable to save stuff. FLStudio's demos (like their soundfont player) are like that and it's a wonderful thing.

I have to vote "X amount of days until plug dies", where X is 0. Native Instruments holds the dubious honor of releasing some demos that time out before your first use.
Next in line is Hypersonic which requires a Syncrosoft dongle to use their demo.
The least-annoying to me is Vember Audio Surge. They periodically convert the audio signal from regular to a ring-mod version for about one second, then revert back to the regular signal. This is non-distracting, yet subtly lets you know you are using a demo.
