OK, I'm installing ST 2.1 fresh...do I need to install v.2 then update my sound sets?
Or can I go ahead and install "all" the sounds from the 2 DVDs?

This is a good question, one I was wondering myself.
I am waiting for my 2.1 Sounds disc to arrive but after a recent OS re-install, I have not put ST 2.0 sounds back on my drive yet.

I installed the new sounds in a separate location than the 2.0 sets, so if you asking if you have to install "over" the other sounds, I believe the answer is no.

You've probably figured it out by now, but Dave is correct. As a matter of fact, installing both soundsets would be counterproductive, since quite a lot of the sounds appear to be unchanged from ST2, and you'll just be duplicating them.
