What I want to know is can you play more than 1 instrument at the same time in EXT, the way you can in Chainer? I was thinking of buying the sonicbytes bundle(ERA & EST) to use in Sonar but I need something to host them(3rd part MIDIfx plugs won't work in Sonar). Would Chainer be better for this or EXT? EXT has more of a learning curve. Also, neither plug is as stable as I'd like. The demo of EXT, especially, will crash suddenly(in standalone mode). It's happenned enough times to worry me.

I'm not familiar with Chainer, but in eXT you can play as much instruments as you want. You can layer VSTIs, or play them on separate MIDI channels, there's almost no limit to how you can interconnect plugins.
I never experienced crashes neither in standalone nor VSTs, eXT is very stable. Could you be more specific, what action do you take or what plugins do you use when eXT crashes.

If you need to save vsti output as a soundfont then get Chainer. If not then get eXT because it does everything else.

Chainer and eXT compliment each other, but are inapropriate to directly compare to one another. Chainer's export .sfz option is still a very slick touch that I don't see anything else doing aside from a half-way developed application that I can't remember now..

If you can afford a license for both, I'd get each one. Maybe if more people had Chainer licenses the developer would change his mind about supporting it.
