I'm having a hard time finding an ARP Pro Soloist.
Is there any kind of decent software emulation of this keyboard available?

It was just a very simplified Odyssey, so Oddity would serve as a very good substitute, and then some...

The Pro Soloist was not a simplified Odyssey. It had special unique waveforms. You can get close, but not exact with an Odyssey.
