overwrite a live recording in FL?
This has got to be the most sensitive process in the world.

undo doesn't do it. cause i still gotta go in there after making sure everything is precariously set up correctly (Ie.. the loops for drums are in place and my synth is selected) before I have to rearm the track and create a whole new wav file.

Couldn't you record the MIDI data first? That would save you having to play the part every time you want to record whatever it is you're doing, and you'd only need to arm the mixer channel once you've recorded the MIDI part.
