I like the Izotope plugins a lot for that, especially the Trash plugin, the "separation" option in the box model panel somehow reproduce the effect of having doubled tracks paned left/right.

And of course Ozone multiband stereo imaging can be awesome on some mixes but it can break everything if not used carefully! :p

call me silly, but stereo eq plug-ins like the kjaerhus classic eq can do a decent job of subtle stereo seperation.

I think in this short out of the blue thought the best enhancement is to let it be and use an eqalizer :)

seriously ... if you need stereo enhancement plugs to make your mix sound good, there's rather a problem of your arrangement/mix/sounds ...
there is one rule:
it simply cannot get wider than between your speakers.
if your mix sounds too unspatial, maybe check your frequency layering according to your pan's and your time-positions (a lot of same frequencies left and right at the same time will summ it up to mono again) ...
also be ware that stereo works better for the ear if you add the 3rd dimension to some of your arrangement components ... such as putting some sounds in the back of your mix with a lot of early reflections (panned f.e. in the middle) ... at the same time some dry components hardpanned left right (works f.e. good with percussive addon-material)
if you do that, your mix will not only sound most spatial/stereo, it will also sound more natural, and it will stay most mono compatible.
mono compatibility is not a too big issue anymore these days, but nevertheless a mix doesn't really sound good if stereo enhanced with a tool (while mastering this is) ...
the only situation in which i'd recomend a stereo enhancer is if you need to "repair" a sound that is absolutely necessary and there's no way to record it again/get the original file untweaked ...

Waves S1. Used sparingly.

It's nice to be able to shift the rotation of mixes or parts as well.
