I wanted to get various opinions on what you guys think is the easiest or most effective/useful way of sampling from a turntable and manipulating samples digitally...
I would like to hear about different hardware and software combos that people use and how satisfied they are with the results

though this is a pretty old article here is a bit of "nuts and bolts" tutorial onhow ta do it, but when it comes to the
Stanton STR8-80 is what I've got for the task and I pick up the signal in Soundforge and record from there... pretty much no muss or fuss...
Once in a DAW editor, you're back a home: wave file is a wave file...just waiting to be mangled
a longer way around is to run your decks into a stereo receiver or something with a preamp, then run line level output to your sound card's analog inputs. Just as good, but not as direct as the spdif scenario.

Can I hook up a turntable to a Saffire with RCA-to-1/4" cables?

I don't know your audio card but I think you can't because probably the 1/4" input is not a phono input but a line input. Usually turntables need to be connected to a phono input because they need RIAA equalization. So you need a dj mixer or a phono preamp or a soundcard with phono input, unless you have a turntable with line output, digital output or usb connector (like one from numark). You can use also your ampli connecting it's rec output to your soundcard input.
