No, not 'all pro VSTI's work that way. Just because you disagree with the signal path chosen by NI for FM8 dosen't make it a 'bug' in the very least. I just had a short stint with both Massive and FM8, and I would most definitely give the nod to Massive, but man does it suck you dry!

It's at least possible to create different type of curves and it's possible to assing multible modulations sources to one destination, what probably works better than Absynth style envelopes for most of the synths users.
