Always looking for a great acoustic piano. Also looking for a great steel guitar. Are the Sonic samples better than the Expansion Tank samples? IK has such a great deal right now.

I like the Piano Collection - there's a lot of good instruments for a great price. Of what I have, the C7 in Piano Collection is second (in my mind) only to the Sampletekk 7CGjr - but the Piano Collection C7 is a LOT easier on the machine!

I have all the Sonic Capsules, and they are all really nice.
That said, I use them mostly for instruments other than steel guitar and acoustic piano.
My "go to" acoustic piano is Art Vista's Grand. It's simply gorgeous, inspiring to play, has a ton of presets, and the cost isn't as much as the so-called higher-end pianos (which IMO are only higher in price).
For acoustic guitar, I don't think there's any better than RealGuitar2. It offers realistic articulations you just can't get with other sample libraries (with the possible exception of Kontakt2 and scripts, though that approach means a lot more money and hassle).
Each of the above costs more than a capsule or expansion tank, but they are really top-notch products at mid-level price. Of course, your budget and needs will determine your final decision.

Check out www.esoundz.com . You can buy the individual sonic reality and expansion tank sounds for Sampletank! There are mp3 demos for most sounds so you can check them out before you buy! The studiosonic kit is superb!

You can't go wrong with any of the Expansion Tanks or Sonic Capsules, but the Capsules have more detail. I really like the different sounds/articulations on the Electric Guitar Capsule. The good thing about these sample sets is they are well-recorded, don't take up all your RAM so you can layer them, and can be placed in a variety of situations using the Sampletank effects.
