I'm reading two different stories on the internet here.
What are exactly Binaural beats?
Is it the difference between the left and right sound's frequencies or is it right in the middle of both sounds' frequencies?

there is also binaural recordinggs in which often one or two mics are strapped to the recorders head so that the sounds represent how the sound would reach the human ear - 3D and such.

Keep in mind that influencing brain wave frequencies can also be partially achieved with amplitude modulation. For instance if you want to raid your brain with, say, 10hz, the ideal effect would be to create a 10hz binaural difference and then modulate it by a 10Hz sine waveform.

1) Binaural isn't really an appropriate term for the beating since it works only in biphonic/stereophonic settings. Binaural implies externality to the ear, as I understand it...?

2) That "brainwave entraining" based on cyclical rhythms/lights is largely contested and extremely pseudoscientific. Little, if any, scientific ties have been made, no placebo effects have been tested, most "brainwave" music is designed to aid in sleep and is embedded in slow, soothing music or white noise, both of which are shown to aid sleep WITHOUT the beats... As I understand it, to claim that brainwave entraining through beating is possible is about as valid as claiming that backwards messages in Judas Priest music can make you kill people because they affect your brain subconciously.

It sounds like it might be believable but there's no real science behind it.

As an addition, I would say that binaural sounds can be used to stimulate certain brain activity/mode. Our brain has four stages - alpha, beta, delta and theta, each of them has a frequency range. When you want to, say, stimulate meditation, which is in alpha state, then you combine the L and R sounds in such a way so their difference to result in a frequency in that range.
