Amazingly, a lot of them don't do that... What models do you know that do that?

It would be rather annoying if they did, and you could not disable it. MIDI-Out and MIDI-Thru are distinct functions.

It can be very useful, for example, like this (if the keyboard transmits midi in to midi out):

Useful yes, as long as it can be turned off, channel mapped, etc. Otherwise it would probably cause more problems than it solved.
