A great start would be some good stretching rubber recordings, but they seem to be hard to come by.. (well, none on freesound) perhaps you have some rubber you can record while you stretch it?

Does anyone have any experience or know of any resources, which might be able to help me synthesize the sound of stretching rubber?

Assuming you mean the usual sound effect for things inflating, rubbing two tightly inflated balloons together can get that. Might have to rosin one balloon up a bit (knowing a violinist can help here).
If you mean a twanging rubber band pitch-bending as it stretches, well... that one's just as easy to homebrew. :-}
